French restaurateur Jean-Christophe Novelli is to open a gastro pub early next year.
His venture, the White Horse in Harpenden, Hertfordshire, will be renamed Novelli at the White Horse and is set to open in January.
The move has emerged as part of a bid to make Novelli's cuisine accessible.
He left his previous restaurant, Auberge du Lac at Brocket, Hertfordshire, after his three-year contract ended.
The White Horse is undergoing a refurbishment ahead of the re-opening.
