Pornstar Martini creator Douglas Ankrah has launched a premade version of his original cocktail, which has become one of this century’s best-selling drinks in pubs and bars across the UK.

The founder of the London Academy of Bar Tending, who is a celebrity in the bar tending world, developed the new ready-to-serve product in response to increased pressures on outlets to deliver high-quality cocktails.

Natural grain spirit and 100% passion fruit purée are used to make the Pornstar cocktail, which is currently available from the Whiskey Exchange.

The pre-batch cocktail completely smashes serve time from around three minutes and 30 seconds, while at the same time providing a drink with as close a flavour profile to a freshly made Pornstar Martini as possible.

‘Higher revenues and margins’

Ankrah said: “It also cuts the need to buy expensive fruits and juices, delivering consistently well-made drinks with higher revenues and margins.”

It is suggested operators choose from three serves, including the ‘perfect serve’ made by pouring the chilled liquid into a Martini glass, accompanied by a shot glass of Champagne/Prosecco.

The perfect serve:

Make: ​The Pornstar Cocktail, served in a Martini glass with a accompanying shot of Champagne
Cut a passion fruit in two, float one half on the cocktail and dust with vanilla sugar.
Drink: ​Scoop out the passion fruit and eat it, sip the cocktail and then sip the Champagne/Prosecco

Or, it can simply be served on the rocks by pouring it into an ice-filled tumbler.

Mix with Champagne in a Bellisimo Bellini by filling half a Champagne flute with Pornstar cocktail and top up with fizz.

Spirits sales rising

Spirits sales in the on-trade have risen by more than 6% to £5.8bn and accounted for 61% of total beers, wines and spirits growth for the 12 months to April 2016 with cocktails forming a big part of that growth, according to CGA Strategy.

However, not all operators have the skillset or space within their businesses to offer a high-standard range of cocktails, leading many to seek reliable high-quality solutions.

New World Trading Company’s new Club House concept in Liverpool serves pre-batched cocktails on draught as its only cocktail offer.

BrewDog and the Draft House also sell pre-made cocktails, proving a cocktail offer can be achieved in the majority of outlets.
