Bramwell Pub Company has identified a large number of sites within its estate where Wild Lime Bar & Kitchen, its new “aspirational” all-day drinking and casual dining concept, would work.

The first Wild Lime opened at a former Varsity in Southampton on 10 June following an investment of more than £300,000, with conversions in Banbury and Reading set to be completed before the end of summer.

Bramwell said: “There aren’t any targets at this stage but there is a large number of sites within the estate where the concept will work.”

Commercial director Sarah Weir told M&C Report​ that the company has identified a gap in the market for the new concept. “It’s clear that the high street has some innovation but it’s traditionally in the areas of fashion, coffee shops and casual dining. We want to bridge that gap with an offer that innovates, injects excitement and drives the rise of ‘casualisation’, enabling customers to do what they want, when they want in an all-day trading format.

“Wild Lime Bar & Kitchen is bright, breezy and laid back; always ‘sunny inside’. The concept has been born from a passion to bring a modern, aspirational and innovative brand to the high street. It was inspired by the new world; their values, culture, food and drink, coupled with exceptional service.”

The food offer, which was created following consumer research, includes freshly-made pizzas, stacked-high burgers, sharing platters and a range of “Under 500 calorie” plates.

The drinks menu includes innovative cocktails, including some made with beer, wine and sparkling wine, and some served in jam jars. The beer selection includes American bottled beers and craft beers such as Harviestoun’s Bitter & Twisted, along with Brooklyn Lager, Peroni Nastro Azzurro and Beck’s Vier. The wine list features new-world varieties.
