A total 22 videos have been added to the site demonstrating beef and lamb cuts to help educate chefs and butchers on how to make more of the carcases and add value using seam cutting techniques.
Links are included to each of the demonstrated cuts in the Cutting Specification Manual and Meat Purchasing Guide. This enables users to access the relevant pages in the books for step-by-step instructions. A yield and costing tool accompanies most of the cuts.
