Top chefs showcase best of Lancashire produce with one-off lunch

Five of Lancashire’s top chefs converged on London to showcase the best of their region’s produce and cooking with a special five-course menu yesterday (17 November) in honour of Lancashire Day.

Gastropub chefs Stosie Madi of the Parkers Arms​, Newton-in-Bowland; Steve Smith of the Freemasons at Wiswell​; and Chris Bury of the Cartford Inn​, Great Eccleston; served dishes alongside restaurant chefs Lisa Allen of Northcote, Langho; and Maurizio Bocchi of La Locanda, Gisburn; at Icetank in London.

Lancashire County Council leader Jennifer Mein said: “Lancashire’s food and drink sector is worth around £734m to Lancashire’s visitor economy and the sector supports an estimated 12,937 food and drink-related posts.

“We have some of the best produce in the country and raising awareness of this around Lancashire Day sends out a strong message to visitors as well as to proud Lancastrians.”

Lancashire Day takes place on 27 November.

The menu:

  • Steven Smith: ​truffle and cheese hot dogs
  • Maurizio Bocchi: ​handmade goats' cheese tortelloni
  • Chris Bury: ​line-caught Morecambe Bay sea bass with shrimps, sourdough and Jerusalem artichoke
  • Steven Smith: ​Ormskirk potatoes cooked in bacon dashi with a Slaidburn crispy hen’s egg, Goosnargh duck ham and hen of the woods from Wiswell Moor
  • Stosie Madi: ​Cockerham salt marsh lamb and Lytham cockle pie with soused fennel and Duerden’s watercress oil
  • Lisa Allen: ​Brockhall village apple 'cheesecake' with sorbet, liquorice and winter herbs

The meal also featured a 'gourmet' coffee course and a collection of Lancashire cheeses.

The Freemasons at Wiswell and the Parkers Arms both ranked in 2016's Top 50 Gastropubs. The Cartford Inn was recently named Best Inn at the Great British Pub Awards.
