Two top chefs have revealed what they consider to be crimes against pub food.

Pubs should serve 'pub food', according to former Gordon Ramsay chef Mark Sargeant. However, that shouldn't stop them from being creative with their menus, he added.

"A pub is a home-from-home and the food should be homely and I think the biggest crime against pub food is when you're trying to run it like a restaurant and do fancy food and still retain an old-fashioned pub identity," he told the Publican's Morning Advertiser.

Cross-hatching steaks

Cross-hatching steaks was another of the worst things chefs could do to pub food, claimed Neil Rankin, chef patron of the Estrella Damm Top 50 Gastropub listed the Smokehouse, Islington.

Rankin, who also runs the contemporary diner Bad Egg, planned to open a third Smokehouse site​, following the opening of a second site in Chiswick earlier this year.

Meanwhile, Sargeant also revealed to the PMA​ his plans to own a small group of pubs across Kent.
