The young chef behind a popular 'nose-to-tail' pub kitchen residency in Brighton has announced he plans to move his operation to a larger pub in the city.

Tom Griffiths's pop-up Flank will move from Indigo Pub Company site the Royal Sovereign, on Brighton's Preston Street, to the Cow – also an Indigo site – in Seven Dials on 1 April.

Griffiths said: "I still wanted to stay in a pub – I think it's important. And I wanted to stay within Indigo - they get what I'm doing. The Cow has a better dining experience. It's got a bigger restaurant space and dining room, and the kitchen has a walk in – all the things a chef wants.

No-brainer

"The name is a no-brainer: 'Flank at the Cow'. It seems like a good marriage in terms of wording."

As well as a daily-changing à la carte menu, Flank at the Cow would most likely begin serving a late-night snacking menu from 10pm until midnight.

Sample dishes could include pigs' ears and sliders, Griffiths said, adding that he also plans to introduce a Saturday brunch menu feature dishes such as granolas, yoghurts and lighter options.

Amazing

"Coming through to brunch, we're going to get some amazing sourdough, ducks' eggs, make our own sausages, dry cure our own bacon, use nice foraged mushrooms and make our own butter."

Additionally, he said he was considering introducing a late-night, offal-based supper club for Brighton chefs and hospitality industry professionals who want to eat that kind of food but may not have the time to given the hours many of them work.
