Merchant’s outside catering op

Merchant Inns has launched an outside catering division called Merchant Inns Out.

The six-strong pubco is offering catering for weddings, corporate events and private parties.

The division’s managing director is Steve Holland, who previously worked for Heston Blumenthal as operations director at the Hinds Head in Bray, Berkshire. His CV also includes catering for events such as the Brits.

Rob Clayton, Merchant Inns’ group executive Michelin-starred chef, oversees

the food, which has a big focus on using locally-sourced fresh produce.

A range of menus are on offer and Merchant Inns Out will also design bespoke menus.

Sample dishes on the under-£35 per head menus include braised duck legs in port wine with a truffle mash; oak-smoked salmon with prawns in a dill mustard mayonnaise with baby salad leaves; and fillet of hake with sun-blushed tomato polenta, sautéed courgettes and rosemary fish sauce.
