Kebabs

  • 1.2kg lean minced pork, lamb or beef
  • four green chillies, deseeded and finely chopped
  • 360g onion, finely diced
  • 15g garam masala
  • 20g ground mustard seed
  • one egg
  • salt and pepper
  • one to two cloves of garlic
  • 60ml fresh coriander, finely chopped

Curry dressing

  • 200ml Uncle Ben's korma, masala, rogan josh or tikka masala sauce
  • 200ml mayonnaise, fromage frais or crème fraiche
  • 20g mango chutney, smooth
  • one tsp fresh coriander, chopped
  • lemon juice, to taste
  • 20 skewers
  • one tbsp oil

Combine all the ingredients for the kebabs in a mixing bowl, mix well. Check seasoning and holding quality by gently cooking a small amount in a frying pan over a medium heat. If the mince is too wet, add a small amount of breadcrumbs to the mixture.

Once the mix is checked divide into 20 evenly-sized pieces and place onto skewers in a sausage shape.

Brush the barbecue grill with oil and place the skewers onto the hot grill and gently cook, turning frequently to ensure even cooking and colouring.

Once cooked place on a serving dish.

Combine the dressing ingredients together, check seasoning and serve.
