by Tony Halstead Newly-created Manx Cat Inns has opened its first pub on the UK mainland following the launch of Rigby's in Liverpool city centre. The £350,000 development marks the start of a busy expansion programme by Manx Cat, a new trading division of Isle of Man brewer, Okells. It plans to open 10 new pubs in the north west. The man heading up the new venture is former Cains brewery managing director Steve Holt, who has personally supervised the development of Rigby's, once one of the city's best-known and oldest pubs. The new-look Rigby's has been created using authentic fixtures and fittings salvaged from a range of period buildings around Liverpool. It is the same format successfully developed by Holt, who opened a chain of Victorian beer-house pubs that became flagship venues for the Cains' operation. The pub itself is leased to Manx Cat by property developers, who have restored the remainder of the building. "I have had a desire to restore this famous city pub for quite some time. Trade has been tremendous since we opened," said Holt. The new manager of Rigby's is Fiona Watkin, who has run a number of Cains' pubs in the city, while catering is under the control of Merseyside Academy chef of the year Tommy Rockliffe.
