Gordon Ramsay's SecretsThe latest offering from the feisty, floppy-haired chef is much more than a cookbook. As well as a fantastic mixture of recipes, which include poached lobster with potato and rocket salad, beef fillet with a gratin of wild mushrooms, chocolate and tiramisu parfait, and fondue of little gem lettuce, the book is also full of Gordon's culinary techniques, short-cuts and tips. With sections on shellfish, poultry, meat, pasta and rice, eggs, fruit and breads, pastries and cakes, inspiration is on offer for all parts of the menu. Although aimed at the domestic cook, there are plenty of ideas and tips that are worth a look for pub menus. Cost: £25, Quadrille Publishing.
