WHO ARE THEY? Tracklements is a Wiltshire-based company producing fine mustards, chutneys and jellies. William Tollberg founded the firm in 1970 after a local pub asked him if he could supply them with a batch of his renowned home-made mustard.
The mustards were a success and Tollberg also received a keen response from local butchers and delicatessens. Pondering on a name for his new business, Tollberg remembered how his grandmother would refer to accompaniments to their meals as tracklements. The firm had a name and set out to produce high-quality relishes and preservatives. Tracklements has enjoyed sustained growth over the past 35 years and moved to its current location at a former dairy farm in Sherston, Wiltshire, in 2001.
WHAT DO THEY SELL? The firm stocks more than 50 different types of relishes, sauces, chutneys, mustards, jellies, vinaigrettes and ketchups. They vary from original Urchfont Mustard to recently-launched lemon pickle. Other products include chilli jam - which was the fourth-best product in the Independent newspaper's 50 best British foods.
WHICH ONE GOES WITH WHAT? Tracklements suggests a range of recipes to compliment many of their products. Ideas include: pasta salad with horseradish cream, asparagus and air-dried ham; sticky onion marmalade sausages, warm potato and bacon salad with sweet mustard ketchup; and monkfish tails with chilli jam.

The company supplies dozens of pubs including: the Neald Arms, Grittleton; the Ship, Luckington; the Vine Tree in Norton; the Rose & Crown in Lea; and the Holford Arms in Knockdown, all in Wiltshire; the King's Arms in Didmarton, Gloucestershire; and the Ivy Inn in Headington, Oxfordshire.
