Interbrew UK joined forces recently with Leith's School of Food & Wine to run practical sessions for aspiring chefs on building the relationship between beer and food.

Interbrew's Vicki Balmer says: "We want to help aspiring chefs to become more aware that beer has a major role as an alternative to wine as an accompaniment to a meal. "It is a very positive development that such a well-known culinary establishment as Leith's is being pro-active in recognising new consumer trends and incorporating this aspect of cooking into its curriculum. This is a one-off initiative but we hope to build on it through further link-ups in the future."

The training sessions took place at the west London school and featured food writer, Richard Fox. Each session covered an explanation of beer and a focus on the different styles, their respective flavours and characteristics. The sessions also included a tasting of the more exotic beers and covered the basic principles of beer and food matching, as well as detailing guidelines on how to use beer as an ingredient.
