The first category cook-offs in the PubChef Awards were held this month with top pubchefs from all corners of the UK battling it out to win their category.

Ten chefs took part in the Meat and Food From Britain categories staged at the Meat & Livestock Commission's headquarters in Milton Keynes. Each category final challenged five chefs to create four of the same main course dish in one hour and 15 minutes.

A panel of industry experts such as Diana Henry​, author of The Gastro Pub Cookbook, praised the culinary skills of the Food from Britain finalists. She said: "I think the quality of the finalists was unbelievably high and with their simple and delicious cuisine, they demonstrated what pub cooking stands for."​ Referring to the Meat category finalists, Hugh Judd​ of EBLEX said: "I was impressed by the standard of all the finalists. The dishes were both innovative and tasty."​ The finalists were short listed from entries received by PubChef after the competition was announced in June.

The winner of each category final goes forward to be judged for the overall title of PubChef of the Year 2005. The winner will be announced at the Morning Advertiser's Best Pub Awards at the Park Lane Hilton in London in February.
