Our roadshow travels north
PubChef teamed up with top food producers in the north west of England to launch the second of its PubChef Live events at the Three Fishes at Mitton, Lancashire.
The information-packed roadshow offered chefs an insight into Lancashire's leading producers. Exhibitors such as Leagram's Organic Dairy, H&P Ascroft, Bowland Forest Meats and North West Fine Foods, displayed regional fare including Lancashire cheeses, locally-grown vegetables, Bowland lamb and black pudding.
National organisations, including the English Beef and Lamb Executive (EBLEX) and Food From Britain, also offered top tips on boosting regional sourcing in pubs.
PubChef Live highlights included a "how to make cheese in 20 minutes" demonstration by Bob Kitchen of Leagram's Organic Dairy and EBLEX meat consultant Viv Harvey's butchery guide to getting more from your butcher through better meat specification.
Proprietor at the Three Fishes and Michelin-starred chef Nigel Haworth devised a three-course lunch menu showcasing local ingredients such as ox tongue from Wallings Farm, Cockerham and lamb from Bowland Forest Meats at Abbeystead.
Haworth stressed the importance of regional sourcing to an audience packed with fellow pub chefs. He said: "Lancashire has some of the best food producers in the UK and it's important for pub operators to make the most of them. More pubs in the UK should be cooking up foods unique to their region."
