Oakham Ales enters Japanese restaurant dessert market

Oakham Ales, the East Midlands based brewery, is to have one of its beers used in a new ice-cream dessert at the Michelin-starred Japanese restaurant Nobu in London.

Regis Cursan, executive pastry chef at Nobu UK, selected the brewery’s dark beer Hawse Buckler to create the dessert called ‘MOM.A’ which will be on the menu from January 2013.

“It’s fantastic to find a UK based brewery which has the same philosophy regarding flavours and quality that I do,” said Cursan.

“Oakham’s Hawse Buckler bursts with chocolate, raisin and dark malt aromas. Its complex spice and coffee malt will perfectly complement the apricot and peach flavours in our ice-cream, balanced by flavours of peanut and hazelnut cookies with a hint of salt.”

Adrian Posnett, managing director of Oakham Ales said: “Nobu is an internationally renowned restaurant and I  hope that once its famous clientele sees Oakham Ales on the menu they will want to sample more.”
