John Calton, chef-proprietor of North Shields-based Staith House, is preparing to open a second venue after winning Food Pub of the Year at this year’s Great British Pub Awards (GBPA).

The MasterChef: The Professionals 2010 winner​, who runs the 60-cover gastropub with his business partner and chef James Laffan, will search for another site after finalising a new 10-year lease for the Staith House with Star Pubs​ later this year, he said.

“If the right location comes along to do a second site, that’s something we want to consider,” he told the Publican’s Morning Advertiser​.

Shortage of skilled chefs

However, a shortage of skilled chefs was an issue for Calton’s current venue and would hinder the progress of a new one, he added.

“We are struggling to find staff,” said Calton. “We are getting people coming to us who are not to the standard we need, even for us to begin training them up. They might have worked for somewhere like Toby Carvery and don’t have the skills.”

It was also difficult to get new staff to understand the rewards that come from hard work, he claimed.

“The hard work is worth it for the recognition the industry gives you when you enter awards like the GBPA.”
