Soda bread
Gastropub Parlour, in Kensal Green, north London, may be famous for its Cow Pie and Chicken Kiev but chef-patron Jesse Dunford Wood has a lot of love for his iconic soda bread.
Ingredients (Makes around two small loaves)
■ 190g plain flour
■ 60g porridge oats
■ 8g salt
■ 8g bicarbonate
■ 15g soft brown sugar
■ 190g buttermilk
■ 25g black treacle
Method
■ Mix and ball all the ingredients together
■ Flour and cut into quarters
■ Cut deep and spray with water
■ Dust heavily with flour
■ Bake at 220°C on a low or no fan – so the flour doesn’t get blown off – for 17 minutes
