The number one cocktail in the UK on-trade is the Pornstar Martini, according to new research from data experts.

Figures from CGA (total on-trade moving annual total volume to 8 September 2018) have found Pornstar Martini was the country’s favourite cocktail, based on share of serves across managed outlets in the third quarter of 2018.

The drink is a modern classic with a sweet flavour, balanced by the sharpness of passionfruit and complemented by a shot of Prosecco or Champagne on the side.

Pernod Ricard, supplier of Absolut Vodka, head of marketing Adam Boita said: “We have been tracking this cocktail’s rise in popularity and are delighted it has finally been given the crown it so deserves."

Theatre of serve

He added: “Consumers are looking more and more for experiences and the Pornstar Martini delivers this because of the theatre the serve provides.

“We have recently seen just how loved this drink is via our Pornstar Martini Townhouse at London Cocktail Week (which took place from 1 to 7 October this year), where we welcomed more than 900 consumers.”

The Pornstar Martini has taken the top spot from Mojito, which was the most popular mainstream cocktail, according to CGA.

Meanwhile, CGA also found 6.5m customers are now choosing to drink a cocktail with a meal​ when eating out, meaning operators need to have a varied and premium drinks offer to pair with food, impacting a diner's decision on where to eat.

Cocktail education

The experience trend is something cocktails fit into perfectly, thanks to their 'Instagrammable' nature.

The way drinks look is as important as the way they taste in today's society, meaning a premium spirit and mixer, topped with an eye-catching garnish is the way forward.

Bar staff are best placed to educate drinkers on the flavour profiles of drinks – and consumers want bartenders' recommendations.

Such recommendations can push certain types of cocktails and inform guests, keeping drinkers and operators happy.
