3663 launches local incentive
Pub cooks should find it easier to source local produce thanks to a new programme being rolled out by wholesaler 3663.
With customers becoming increasingly interested in the provenance of dishes on the menu, as well as issues such as food miles, 3663 hopes to combine the advantages of food from local producers with the convenience of buying from a single supplier.
The initiative has been piloted in Suffolk, where a variety of local food is available to pubs. It is now being rolled out in Kent, and will be offered nationally during the course of the year.
The ranges will include frozen, fresh, chilled and ambient products. Julie Moore, 3663 marketing controller, said: "Chefs prefer to use local ingredients, but every additional supplier adds a significant cost to a traditional wholesaling operation.
"Once the cost has been adjusted to accommodate these extra expenses, the availability of locally sourced goods becomes too expensive.
