The chef at a mid-Wales pub is helping to ensure that our European neighbours get a tasteof the Principality. Peter Martin, chef and manager at the SA Brain-owned Griffin Inn at Llyswen, Brecon, features in a television programme aimed at promoting Wales and its food. He was filmed in locations including Caerphilly Castle and the literary town of Hay-on-Wye, creating some of his speciality Welsh dishes and talking generally about his life in Wales. The programme will be shown some time in the New Year in countries including Italy, Belgium and Spain. The award-winning Griffin Inn is renowned for its menu and, to create his speciality dishes, Martin uses quality fresh produce, sourced, where possible, from the local area. During the programme, which is to be called "Celebrity Chefs of Europe" viewers will see him make a delicious meal of Welsh black beef fillet, puréed leeks and a Christmas log. Martin said: "As a nation, we have a great love of food and some of our traditional dishes take a lot of beating so it was great to have been involved with a project that is going to help promote the country in this way." SA Brain retail development manager Peter White said: "The Griffin is well-known for its quality food and I'm pleased that Peter has been able to use his skills as a chef to help promote Wales to a wider audience.
