Michael North, head chef and proprietor at the Goose at Britwell Salome, Oxfordshire,has scooped a Michelin star in the Michelin Guide Great Britain & Ireland 2005.

Michael's eatery becomes only the 6th UK pub to be awarded the accolade and the only new pub to be awarded a star this year. Eleven other pubs also received a Bib Gourmand for offering "good food at moderate prices". Michael, who was inspired by chefs Raymond Blanc and Marco Pierre White, expressed disbelief after receiving the accolade on his 26th Birthday.

"To receive a Michelin star is amazing. I just can't take it in at the moment and won't believe we've done it until I see the book in print."

A modern British menu, offering top-quality regional produce,cooked in a simple style, had ensured the pub's success, according to Michael.

"I wanted to create a diverse menu that would show off great local ingredients. We use the best suppliers we can find and try not to be over-elaborate." Local suppliers include beef from Field Farm Fresh in Appleton,and lamb from Well Place Manor at Well Place. Oxfordshire-born Michael bought the Goose two years ago and aims to capitalise on winning the prestigious accolade.

"The Michelin star should be a great boost for business and we hope to see trade take-off over the coming months."
