Barracuda has unveiled the menu that will be offered at its new trading format, Juniper Inns.

The first Juniper Inn will be officially opened next month.

The menu, developed from scratch by a specialist team headed by catering development manager Martyn Smith, comprises a mix of standard pub food favourites plus a number of individually sourced dishes.

'It's a brand new menu for a brand new concept and we have worked very hard to devise something that provides both traditional fayre plus an essential point of difference for customers, said Smith. 'We sat down and asked ourselves what the market demanded and came up with a menu that offered core value in the concept which we wanted to devise.

The Juniper team has developed a food choice that contains tried and tested pub favourites such as sausages and mash and fish and chips, but balanced this with more off-beat choices such as Cape Malay Lamb and a specialist vegetarian dish Brie & Redcurrant Tart. The fixed Juniper menu will be supplemented by a list of six daily-changing specials, which will be devised by each pub on an individual basis.

'We looked at what our competitors were doing but also spent a lot of time studying the different food menus offered by individual pub food entrepreneurs, Smith revealed.

'There is a heavy concentration on fresh produce and carefully sourced suppliers of meat and other materials.

Prices for starters, which include dishes such as Peppered Mushrooms En Croute and Filo-wrapped Prawns, average £3.45.

Main courses include Cajun Chicken and Wensleydale Pork and are priced around the £5.95 mark with desserts at £2.95.

The Juniper menu also offers a two-meals-for-£6 package for diners visiting pubs between 3pm and 7pm from Mondays to Saturdays.

The Sunday lunch roast carvery, priced at £6.45, will be served throughout the day.

The first Juniper Inn, the Bridle Path at Wickham near Newcastle, will open on Saturday 2 July and will be followed two weeks later by the Grey Horse at East Boldon near Sunderland.

Barracuda says early conversions to the new concept will focus on surburban community pub sites.
