Cocktail credentials: With more than 30 years' experience in the industry, Edwardes is one of the most well-known names in the cocktail business. Before opening award-winning Brighton hotel and restaurant Blanch House with his wife, Amanda Blanch, he managed fashionable London bar the Groucho Club as well as several other high-profile venues. Blanch House has won an enviable collection of trophies, including Best Cocktail Offering in Britain and Best Bar in Britain in the CLASS awards, which is organised by the MA's sister magazine. Edwardes was nominated in the Best Bartender category at this year's awards, where he picked up the gong for Best Bar Team in Britain.

Best trick of the trade: I prefer to use fresh fruit rather than the normal bottles of mixers.

serving suggestion: It's best to keep glassware as simple as possible. If a pub's got decent-looking

half-pint glasses it makes sense to use those for cocktails.

Biggest crime against cocktails: The worst is cocktails that are badly made and which use too much garnish.

top tip for getting started: If you're not sure what to do, get some advice from an expert. The best approach is to design a simple list of drinks that are easy to make and don't involve a lot of faffing around.

Ging Gang Dooley

Fill a glass with ice, then add:

11/2 shots dark rum

11/2 shots Dooley's

Juice of half an orange

"In an ideal world this cocktail should be shaken and all pubs should have a shaker. If you're mixing something creamy and fruity then it really does need to be shaken. Cocktail shakers can be picked up almost anywhere."

Coconut Mule

Fill a glass with ice, then add:

11/2 shots Morgan Spiced

3/4 of a shot Malibu

Juice of half a lime

1 shot gomme syrup

Half bottle of ginger beer

Another squeeze of lime at the end

Tropical Paradise

Fill a glass with ice, followed by:

1 shot Tuaca

1 shot Malibu

Juice of half an orange

Juice of half a lime

1/2 shot of gomme syrup

Mix, then garnish with slices of lime and orange

Yankee Dooley Doo

Fill a glass with ice, then add:

11/2 shots of bourbon

1/2 shot of Dooley's

1/2 bottle of pineapple juice

1/2 bottle of ginger beer

Stir to mix

"I would have preferred to use apple instead in this recipe but the pub didn't have any in stock. However, pineapple works just as well."
