3G Food Service Sous Vide premium dishes

3G Food Service has added to the meat main courses in its "Sous Vide" range Moroccan lamb shanks with apricot and chilli sauce; chicken supreme with Caerphilly cheese and leek and bacon stuffing; and duck breast with kirsch and black cherry sauce.

The meat comes ready-cooked and just requires heating. Ben Smales, managing director of 3G, said: "The Sous Vide process results in fantastic, succulent textures and intense, enhanced flavours. Taking just 20 minutes to cook when defrosted, our products are ideal for outlets of all kinds."

Each of the dishes is available in packs of six - 3G's case sizes having been reduced from packs of 12.

Bisto Bouillon pastes

The gravy brand has extended its range of bouillon pastes with six new varieties. Bisto has introduced beef, chicken, lamb, vegetable, fish and ham pastes - all of which can be used to create thick and flavoursome stocks. They are quickly dissolved in boiling water to guarantee a consistently smooth stock. Alternatively, they can be stirred directly into a dish while it is cooking. Unlike many other bouillons, Bisto's version does not include herb particles, leaving chefs free to add their own flavours.

They are gluten free, free of artificial colours and flavourings, and available in 1kg tubs with re-sealable lids. Each tub creates 50 litres of stock and has an 18-month shelf life.

The Authentic Food Company Eastern-inspired dishes

A number of new Eastern-style meat dishes have been added to The Authentic Food Company's range. The additions include main courses and gyozas - traditional Japanese dumplings. Beef in black bean sauce, lemon chicken, sweet and sour chicken balls, and Cantonese style crispy shredded chicken are now available as main courses.

The gyozas include three meat varieties - pork yuk sung, spicy chicken and peking duck. The dumplings consist of a filling wrapped in an oriental-style hot water pastry. In eight minutes they can be prepared and steamed from frozen, then shallow fried in olive oil until golden brown.

Apetito Aberdeen Angus beef and ale pie and chicken, leek and Wiltshire ham pie

Provenance is playing a big part in Apetito's range of meat products, with the company creating two meat pies that target customers concerned with the traceability of their food. Apetito believes that its Aberdeen Angus beef and ale pie and its chicken, leek and Wiltshire ham pie satisfy demand for meat coming from a specified region and reputable sources.

The Aberdeen Angus pie is a small crown pie filled with chopped Angus steak in a rich ale and mushroom gravy, encased in a puff pastry pie. The filling uses entirely British Aberdeen Angus steak, Boddingtons ale and mushrooms. The second pie is filled with diced chicken, leeks, Wiltshire ham and a creamy sauce. Both products are supplied frozen in pack sizes of 12. They can be cooked in 30 minutes.

The Authentic Food Company Gastro-Pub

The Authentic Food Company has launched seven new dishes under its Gastro-Pub brand, created at the end of 2005. The original Gastro-Pub product, marinated lamb shanks, has been joined by Malaysian beef curry with asparagus and aubergine, corn-fed chicken breast in a forest mushroom sauce, marinated satay chicken with a sachet of peanut sauce, and mini beef rib in a Madras sauce.

The new range also includes Moroccan lamb shank with chickpeas and apricots, pork hock in a spicy Peking sauce and Malaysian yellow prawn curry with red peppers.

The new dishes are designed to be served as main courses. The corn-fed chicken breast, mini beef rib, Moroccan lamb shank and pork hock all come in sous vide format, needing only to be boiled from frozen or chilled for approximately 40 minutes, or microwaved from chilled for around six minutes. In nine minutes, the prawns and Malaysian beef curry can be prepared and cooked in the microwave, while the Satay chicken can be either oven-cooked in eight minutes or microwaved in 90 seconds and drizzled with the warm peanut sauce.
