Chef Nigel Haworth's Ribble Valley Inns has opened a second pub in Lancashire.

The Highwayman in Nether Burrow, is based on the same menu formula of freshness, quality and regionality as its award-winning Three Fishes in Mitton, which opened two years ago.

The pubco has spent £1.2 million refurbishing the pub and the menu focuses on traditional North West dishes with a contemporary twist.

Dishes include starters of Shorrock's tasty Lancashire cheese on toast with Cumbrian sweet cured bacon and Worcester sauce dressing (£5.50).

Mains feature Kitridding farm Cumbrian sausages, mash and onion gravy (£8.75) and desserts of Lancashire curd tart and organic lemon cream (£4.50).

A Tri-Counties cheeseboard is also available featuring 10 cheeses from Lancashire, Cumbria and Yorkshire.

Pictures of the pub's local suppliers hang on the pub's walls and feature on placemats and menus.

Haworth said: "This region boasts some of the best artisan food producers in the world, plus a fine tradition of classic dishes."

The pub is serving its own brand of coffee, which it has had specially blended and is available for customers to buy.

Haworth's business partner Craig Bancroft has created the drinks list, including Thwaites ales. The Three Fishes general manager Andy Morris has put together the Highwayman's new team.
