British Potato Council Definitive Guide to Potatoes

Here¹s my Definitive Guide to Potatoes: peel, chop, place into deep fat fryer, drain and serve the chips. The British Potato Council, though, has produced its own slightly more comprehensive version, which features details of which spud¹s in season when. It also includes best practice advice, cooking tips and a variety of spring recipe suggestions. It¹s free and can be found at www.potatoesforcaterers.co.uk. Or call 01865 782 227 for a copy. I can¹t work that new-fangled interweb.

Knorr Classic Chunky Soup

The last time I saw chunky vegetable pieces was Friday night, deposited by Big Ron after a dodgy pint. It must have been one he got from the other pub in the town earlier in the evening, I told him. But this latest time was a much more pleasant experience. Knorr Chunky Soup is the newest addition to the Knorr dry soup range and is packed with chunky vegetables. The visible pieces give it the appearance of being made from scratch, meaning I don¹t need to spend so much time preparing the soup myself.

I do like a touch of something Mediterranean at this time of year it reminds of that holiday on Paxos. So I¹m very impressed by the Authentic Food Company¹s Mediterranean options, which include Greek-style parcels, brie & cranberry paquettes and asparagus, spring onion & cashew cigars.

The Greek-style parcels are a combination of feta cheese, red onions and courgettes with herbs, encased in a light, crispy pastry. I¹m not sure what the difference is between a parcel and a paquette, but I¹m sure our postman could tell me.

The brie and the cranberry paquette consists of brie and cranberry wrapped in a crispy parcel, but I don¹t think I¹ll risk serving them through the letter box. I¹ve checked, and it¹s OK to serve asparagus, spring onion & cashew cigars as long as no-one tries to smoke them to be fair the, the only person likely to try it is that student we have behind the bar on Friday nights. It¹s actually a long spring roll filled with crushed cashew nuts, asparagus and coriander perfect for busy establishments. All the Mediterranean options can be fried from frozen in less than six minutes.
