Cheeky cheesy bean and beef fajitas

Ingredients

(serves 4)

• 415g Heinz Beanz

• 2 sirloin steaks, each about 250g (8oz)

• 35g fajita seasoning mix

• Grated rind of 1 lime

• 2 tblsp light olive oil

• 1 red onion (sliced)

• 1 green pepper (cored, deseeded and sliced)

• 1 yellow pepper (cored, deseeded and sliced)

• 8 small four tortillas, warmed

• 50g Cheddar cheese, grated

• 8 tblsp soured cream

Preparation

Sprinkle steaks on both sides with half seasoning mix and lime rind. Brush with a little oil and leave to one side. Put onion and sliced peppers in a bowl and toss with remaining seasoning mix and lime rind. Heat a griddle pan to hot and cook steaks for 2-3 minutes each side.

Heat remaining oil in non-stick frying pan and cook onion and peppers for 5 minutes over medium-heat until cooked through. Add Heinz Beanz to pan and stir to mix. Bring to boil and remove from heat. Cut meat into thin strips. Spoon bean mixture into warmed tortillas, top with grated cheese and slices of beef and drizzle with soured cream, wrap and serve.
