While many pubs offer a choice of Sunday roast in a bid to attract trade, the range on offer at the Victory Inn, Brighton, is hard to beat.

Ostrich, camel, kangaroo and zebra routinely appear on the Sunday lunch menu alongside more traditional fare such as pork and beef.

The exotic roasts menu is the brainchild of manager Jim McFruin and chef Pete Moore. The pub, owned by the InnBrighton pub group, trades in the busy Lanes area of the town, and needed to make its offer stand out.

"Sunday lunch is a big occasion in Brighton," said Jim. "Everyone likes to come out for a roast. But that also means that there's loads of competition. We started offering the exotic meats as a way of getting to people to come and give us a try."

The meat is sourced from a specialist supplier who offers either UK farmed supplies or meat from sustainable commercial herds.

Jim reports that around 80 per cent of customers opt for a more conventional Sunday lunch, with red snapper on offer as well as roast meats. The exotic fare offers something for more adventurous customers as well as making the pub a talking point.

"Kangaroo and ostrich are now more-or-less permanent fixtures on the menu," said Jim, " and we vary the others just to keep things interesting."
