Fuller's recruitment manager Louise Lawler has been recruited herself, this time by Punch Taverns.
Lawler, former tenanted and leased recruitment coordinator at the London brewery, is taking on the lease of Punch's Old Nun's Head in Nunhead, south London. She was previously in charge of matching licensees with vacancies in Fuller's estate.
She will run the pub with partner Daniel Rowntree and the couple aim to turn over £12,000-£15,000 per week within three years.
Rowntree plans to introduce Lincolnshire sausages and other pork specialities, including chine and haslet, from his father's farm.
The couple have privately funded the purchase. "Leases may not be perfect, but it's right for us at this stage, and Punch has been very reasonable in its negotiations."
Rowntree, who used to work for Bacardi, will head up marketing and business development, while Lawler will be operations director. Rowntree said: "Within
three years we'll be looking for a second site."
Lawler said: "It didn't matter who the pub was with, but this one was our local — we lived in the area for four years. We see a lot of potential in it."
