Noble Inns plans five sites

The operator of an award-winning London gastropub says he plans to run an estate of around five sites under his new company Noble Inns.

Scott Hunter opened his second outlet, the Lady Ottoline Pub and Dining Rooms in Bloomsbury, two months ago after investing £500k on a Victorian-themed makeover at the Punch Taverns leasehold.

Hunter also runs the Princess of Shoreditch pub in Shoreditch, an Enterprise Inns leasehold, which was named Timeout Gastropub of the Year in 2010.

Hunter said: “We’d like to grow to around five pub sites. Punch has been fantastic, very helpful.”

He said trading at the Lady Ottoline has been going “extremely well”, with the pub fully booked for most of December. “We’re a little bit more food-led than we anticipated and we’ll look to bring the balance back at around half liquor trade, half food in the New Year.”

Before taking on the Princess of Shoreditch three years ago with his partner Maria Larsen, Hunter worked as a manager at Pitcher & Piano. He also worked for Young’s and a number of high-end cocktail bars in London.
