The Michelin-starred Pony & Trap pub is behind a pop-up restaurant in Bristol next month.

Josh Eggleton, who owns the pub in Chew Magna, has teamed up with Luke Hassell, director of Tipi Events, to launch the Eat Drink Bristol Fashion in the city’s Queen Square.

From 25 April to 7 May the event will showcase the city’s leading chefs in a custom built modular tipi structure comprising a 100-seat formal dining area and a relaxed Champagne and wine bar.

Each night a new resident chef with industry accolades from AA Rosettes to Michelin stars will host the dining room with their own menu. The opening day will see a five-course menu put on by the Pony & Trap with other participating pubs including the Bird in Hand in Long Ashton and the Pump House in Bristol.

“We’ve set up Eat Drink Bristol Fashion to celebrate Bristol’s thriving food scene,” said Eggleton. “Many local suppliers, chefs and restaurants are doing great work and in the process making Bristol one of the most exciting culinary cities in the country.”
