AA Rosette chef Nigel Ramsbottom to develop menus for Exclusive Inns

An award-winning chef whose pub was recently acquired by Exclusive Inns has moved to a different outlet owned by the operator and will help develop menus across its three sites

Nigel Ramsbottom, former head chef at the Swan Inn, in Monks Eleigh, Suffolk, made the switch to the Anchor Inn, in nearby Nayland, after Exclusive acquired the Swan at the end of March.

In his time at the Swan, Ramsbottom helped the pub earn two AA Rosettes plus recommendations from a number of guides including Michelin​, Alistair Sawday’s​ and Time Out​. The pub is to close for refurbishment before opening again in the summer.

The Anchor Inn is said by Exclusive to be an idyllic riverside pub overlooking the Stour Valley. The pub has a first-floor room for formal dining and an on-site smokehouse.

Menu development

As well as taking the helm at the Anchor, Ramsbottom will also be working with head chefs to develop the menus at the Swan, and Exclusive’s third pub – the Angel, in Stoke-by-Nayland.

The Angel is a 16th century coaching inn that includes six recently-refurbished boutique bedrooms.
