The operators of an Everards' Project Artisan pub in Birmingham are to open an artisan bakery which will supply other businesses in the city, including pubs.

Carl Finn and Matt Marriott, who run the Church Inn near the city’s Jewellery Quarter, have teamed up with local chefs Dom Clarke and Lap Fi-Lee for new venture 'Peel and Stone', which opens later this month. 

Named after traditional baking tools, ‘Peel and Stone’ is situated beneath the arches of the city's Water Street and joins the small number of independent bakeries already in the city.

The Church Inn opened a year ago and features a menu featuring food inspired by the USA's deep South.

The pub is a Project Artisan site which is Everards' scheme where they team up with artisan producers to bring their business into the company's pubs or properties.

Supplying fresh bread to pubs, restaurants and shops within a four mile radius of central Birmingham, ‘Peel and Stone’ will primarily focus on wholesale as well as selling to the public.

The new bakery comes complete with a portable wood-fired oven and smoker which will be used for pop up events and is aiming to produce at least 3,600 loaves and buns each month.

"The four of us were in the Church Inn and we realised no-one in Birmingham city centre is producing good bread well," explained owner Carl Finn.

"Ten minutes later we’d decided to open a bakery. Six weeks later we had a building, a name, the website and had bought the ovens and all the equipment. We know the city centre well and know the demand is here."

Finn is looking to open further sites with Everards.
