Matthew Ramsdale from the Lime Kiln in Owestry, Shropshire, is one of 20 chefs competing in the competition on 11 June.

The semi-final takes place at Sheffield College and Cardinal Wiseman School, Greenford, Middlesex, when Ramsdale will compete in a series of culinary challenges to impress a panel of experts.

The graduate awards launched in 2003 and are aimed at chefs aged 23 and under and recognise a young working chef’s culinary excellence.

Craft Guild vice president Steve Munkley said: “Last year the standard was unbelievably high but looking at the paper entries we’re set for an exciting few months of competitions with lots of new an upcoming talent.”

Following the semi-finals the successful chefs will then progress to the next round to sit the final exam on 28 August at University College Birmingham.

Successful candidates will have to achieve a score of 85% in the final exam to be crowned a graduate.

“Becoming a graduate is not easy, but we look forward to seeing which candidates rise to the challenge and join the fantastic chefs who sit in the graduates hall of fame,” added Munkley.

The results will be announced at an awards ceremony on 5 September at the Landmark Hotel, London, where along with the presentation of the Graduates certificates and Highest Achiever Award, there will also be an Employers' Award for Excellence in Training.
