The Brasserie Bar Co has begun an extensive expansion of its White Brasserie pub brand.

Following funding from ESO Capital six months ago, the group is now aiming to open 20 new pubs within the next three years.

The White Brasserie Company already operates two pubs – the King’s Head in Teddington, south west London and the Queen’s Head in Weybridge, Surrey – with new site The Hare in Harrow Weald, Middlesex set to join the group at the end of July.

The Hare

The Hare will feature 120 covers across its 4,000 square foot site and will serve traditional British cuisine with French influences.

With a seasonally changing menu, the pub will offer starters of warm ox tongue salad; Burgundian snails in garlic herb butter and salmon tartare.

Mains will include Toulouse sausages with Lyonnaise sauce; fresh fig, Jervaulx blue cheese and onion tart; dressed Brixham crab with lemon mayonnaise and 30 day dry-aged Cornish heritage steaks.

The dessert menu will feature crepes suzette with an orange and Cointreau sauce; chocolate and coffee marquise with a praline sauce and summer berry savarin with crème Chantilly.

There will also be a selection of Ploughman’s and fisherman’s sharing boards as well as classic pub favourites such as gammon steak with a duck egg and chips and a pie of the week.

The Hare has undergone a complete refurbishment and will feature reclaimed wooden floors, oak beams and leather banquette seating.

A large garden will provide space for an extra 40 covers throughout the summer.

The company has also appointed a new operations director, Paul Van Zijl – formerly operations manager at Gaucho Grill.

Director of Brasserie Bar Co Mark Derry said: “The ESO funding enables us to rollout our successful pub brand and The Hare is the first step in growing our portfolio. We are confident that The Hare will offer fantastic quality food in a relaxed home-from-home environment.”

Two more sites – The British Queen in Orpington, Kent and the Sun Inn in Chobham, Surrey – are also set to open this year.
