Harry Kodagoda: The Anglian Country Inns director of food will be taking the audience through the evolution of pub food
The Development Chef Club Food Forum, sponsored by Farm Frites and run by the Publican's Morning Advertiser's sister title Restaurant magazine, has revealed its line-up of chefs.

The line-up will include James ‘Jocky’ Price, former head of creative development at Heston Blumenthal’s Fat Duck in Bray, Maidenhead, who will be speaking about his new development chef role at Brett Graham’s two-Michelin star restaurant the Ledbury in Notting Hill.

The inaugural event, which will take place on 1 October at Westminster Kingsway College in central London, also includes Harry Kodagoda, director of food at Anglian Country Inns, who will be taking the audience through the evolution of pub food. The company has won Best Food Offer in the Publican Awards for the past two years.

Graham Hornigold, executive pastry chef at Hakkasan Group, will be demonstrating desserts that feature on the Cantonese restaurant group’s menus and discussing how he keeps up with international expansion plans.

Indian insight

Vivek Singh, the highly respected chef behind London based Indian restaurants the Cinnamon Club, Cinnamon Kitchen and Cinnamon Soho will give an insight into repackaging authentic Indian food for the casual dining market.

Kurobuta founder Scott Hallsworth will be on hand to create a selection of the restaurants most popular dishes and describe how his ‘junk food Japan’ concept re-imagines the cuisine for a more mainstream audience.

Rustic Spanish and Italian dishes will be created by chef director Ben Tish from London’s Salt Yard Group, while Ajay Barak, director of food development at Le Bistrot Pierre will discuss building an authentic but cost-effective French menu and how the group’s multiple UK sites appeal to older diners.

The Development Chef Club is in association with Farm Frites.
