Head chef and co-owner of Michelin-starred gastropub the Pony & Trap Josh Eggleton has opened the restaurant of his new standalone fish & chip outlet the Salt & Malt to the public.

The Salt & Malt, which sits by Chew Valley Lake in Somerset, also features a tea room, cafe and takeaway, which opened in late December.

The restaurant's menu includes a range of classic fish dishes as well as some more experimental and seasonal options such as monkfish curry and smoked haddock chowder.

Eggleton has also hinted at the possibility of expanding the Salt & Malt brand with another branch in the near future.

He told the Bristol Post: ​“I want to be able to replicate this where it will work – Bristol is an option.

“But a pre-requisite is that is has to have a view of the water, so the Bristol docks is absolutely a keen target.”

Josh and Holly Eggleton took over the Pony & Trap, in Chew Magna, Somerset, in 2006. It gained a Michelin star in 2011, which it has held on to ever since.

The Pony & Trap came second in this year’s Budweiser Budvar Top 50 Gastropubs Awards.
