London-based brewery Signal Lager has partnered with grill and smoke restaurant and bar Pitt Cue in their new City location, it has been announced.

The naturally carbonated 4.8% ABV lager is unfiltered and unpastuerised and is brewed over two months, in small batches. It is conditioned at temperatures close to freezing for long periods to ensure clarity occurs naturally. There are no sweetening adjuncts such as rice and maize or the use of yeast aids and additional flavourings.

It is created using the 'route seven' ideal where the lager doesn't rise about the optimal serving temperature of 7ºC from conditioning tank to serve. Cans are used to block UV and contain a dual seam seal to minimise oxygen pickup.

Complementing the restaurant’s own on-site Alphabeta brewery, the lager has been positioned next to other craft beers and spirits.

Experience

Pitt Cue bar manager, Adam Pendrich, said: “We believe that the drinking experience at Pitt Cue should be the same level as the dining experience.

"It’s why we champion small, passionate ‘underdog’ brands and only stock drinks that we can be sure of the ingredients and process: ones that ultimately haven’t been messed about with. Signal Lager has a clean, fresh flavour that works well with food, with enough substance to cut through the meat dishes and so is a great addition to our drinks list.”

Perceptions

Signal co-Founder Dom Thorpe said: “We have set out to reinvent consumers’ perception of lager by creating a really fresh, small batch product with just four natural ingredients.

"Pitt Cue is the perfect restaurant for our brand to launch with as we have huge respect for their drinking and dining ethos.”
