Tom Kerridge and RayGray Snacks launched a new range of pork scratchings at this year’s international food & drink event (IFE) on Monday 20 March.

The deal was struck in November last year and since then, Kerridge, owner of the double Michelin-starred Hand & Flowers and its sister pub the Coach both in Marlow, Buckinghamshire, has worked closely with RayGray to build on classic tastes, catering for all.

Pork Crunch will be made from 100% British pork rind and will include flavours such as British Sea Salt, Pickled Green Chilli and Smoked Paprika.

Organically sourced ingredients

The rind will be sourced entirely from Packington pork – a cross breed of the Large White, Landrace and Duroc breeds.

Packington pigs are free range and reared to the highest welfare standards with the production systems being focused on achieving the best conditions and welfare for all the pigs.

All the pigs are reared to the RSPCA Freedom Foods standards and are annually audited by Freedom Foods.

Kerridge highlighted the importance of farming and how operators go about getting their ingredients.

A porky pub snack

He said: “British pig farming and animal husbandry are incredibly important and the highest levels of care are reflected in the excellence of this finished product.”

RayGray Snacks managing director Graham Jebb lauded the company’s time with Kerridge in producing the new range of scratchings.

He added: “We’re keen to show that you can still enjoy a porky pub snack that’s low in carbs and high in protein.”
