Available from Bidfood, this adaptable ingredient absorbs the flavours of sauces you cook it in, and not only looks like meat, but has a similar texture once prepared

To cook the jackfruit:

  • Heat the oil and sauté the onions until golden brown
  • Add the prepared jackfruit (you need to cut the core out before cooking)
  • Cook for a further 10 mins and then add ⅓rd of the Lion Hickory BBQ sauce – pull the jackfruit into shreds
  • Place into an oven tray and pour over the remainder of the sauce
  • Cover and place in oven at 160°C for 40mins
  • Remove from the oven and stir at regular intervals – add more sauce and water if required
  • Chill and use as required

To assemble the tacos:

  • Warm the cooked jackfruit and put to one side
  • Warm the corn tortillas and then pile in the jackfruit
  • Finish with sliced red onions, sprigs of coriander and lime wedges
  • Serve with a little salsa or more of the Lion Hickory BBQ sauce on the side.
