This recipe shows that simple can be best by combining sharp grapefruit with cooling mint to produce a drink that is alcohol-free but full of flavour.

INGREDIENTS

  • 80ml juice from a ripe pink grapefruit
  • Juice from half a lemon
  • 40ml sugar syrup
  • Cold or sparkling water to top up
  • 2 mint sprigs
  • Crushed ice

METHOD

  • Pour the sugar syrup into a tumbler and add mint sprigs
  • Stir and bruise lightly
  • Add the citrus juices and stir 
  • Top up with crushed ice and sparkling water
  • Garnish with a slice of grapefruit
