A chance encounter and a life-long love for pubs has seen one of the north-west’s leading chefs open his own site to great success and he’s already eyeing up a second!

Elite Bistro’s Gary Usher, the man behind the award winning Sticky Walnut, Burnt Truffle and Hispi, to name a few, has now opened his first pub, the White Horse in Churton, near Chester.

He said the decision to open the pub happened by chance when he found himself driving past the site purely by chance. “I started in pubs, and I’ve always been fond of pubs, who doesn’t love a pub? I was driving past, saw a for sale sign and thought, why not? I didn’t think anything would come from it!”

Things quickly escalated and 12 months and one round of crowdfunding later, the pub has been renovated and restored and is quickly attracting a strong following across the local area.

The Morning Advertiser’s Ed Bedington took the trip to Chester to catch up with Gary to find out how the business is going and whether it’s all about pubs going forward.
