The Publican Awards 2026 Best Sustainable Pub Company finalists showcase operators embedding environmental responsibility into everyday practice

St Austell Brewery

St Austell Brewery operates across brewing, wholesale and pubs, with sustainability embedded into the way the business is structured and managed. Over the past 18 months, the company has aligned its executive team behind clear environmental targets, integrating sustainability into operational reporting, performance metrics and long-term planning.

A detailed food waste audit has driven practical change across kitchens, addressing plate waste, preparation losses and spoilage through training, whole ingredient cooking and redistribution partnerships. The business is also engaging suppliers to establish more accurate Scope 3 baselines across key ingredients, including beef, barley and hops.

Energy performance is monitored weekly, supported by year-on-year reduction targets and investment in solar and electrification. Alongside this, St Austell continues to prioritise local sourcing and transparent reporting, positioning sustainability as a core part of its long-term strategy.

Ardent Pub Group

Ardent Pub Group is a growing multi-site operator that has embedded sustainability into its operating model from an early stage. Recently achieving B Corp accreditation, the business has focused on integrating environmental responsibility into daily operations across its pubs.

Real-time appliance-level monitoring through Cap Energy supports informed decision making, while waste reduction initiatives delivered in partnership with First Mile have strengthened segregation and accountability. Sustainability is built into internal communication, staff onboarding and new site openings, ensuring it forms part of everyday working practice.

The group places emphasis on responsible sourcing, supplier standards and lower carbon menu development, including seasonal and game-led dishes. With clear internal alignment and systems established to support growth, Ardent has positioned sustainability as a central pillar of its business as it continues to expand.

Wells & Co

Wells & Co is a family brewer and pub operator that has strengthened its sustainability programme across its managed estate in recent years. A comprehensive food waste audit, delivered in partnership with WRAP’s Guardians of Grub, identified plate waste as a key challenge and led to practical changes including portion recalibration and hands-on chef training.

The business has invested in improved data collection, installing smart meters and developing more granular energy monitoring to better understand site-level performance. Sustainability is communicated in commercially relevant terms, helping teams connect environmental action with operational efficiency.

Alongside clearly defined net zero targets, Wells & Co continues to evolve its approach, combining data-led insight with employee engagement and community initiatives to build a structured and commercially grounded sustainability strategy.
