Offering a Japanese-inspired twist on the classic recipe, the Yuzu Margarita is the second most sold cocktail at the Edinburgh cocktail bar, which is number 17 on the Top 50 Cocktail Bars list, Palumbo told The Morning Advertiser (The MA).
The cocktail bar owner was inspired to create the recipe around 12 years ago while living in London and working at a Ramen bar called Bone Daddies.
Palumbo, who runs Hey Palu alongside wife Rachel, said the fresh and zesty serve “keeps people coming back” to venue.
He added the cocktail, which retails at £12, should always be made with Blanco Tequila, not Reposado, and made fresh to order.
“The Yuzu Margarita is one of our most popular drinks. It’s refreshing and aromatic, with the green notes of the Tequila working beautifully alongside the sharp, vibrant character of the Yuzu”, Palumbo told The MA.
The award-winning cocktail bar uses Ocho Tequila, mixed with Monin Yuzu puree, but other brands also work.

Yuzu Margarita
Ingredients:
- 50ml Blanco Tequila
- 25ml Yuzu purée
- 25ml Fresh lime juice
Method:
- Shake all the ingredients together and double strain into a chilled rocks glass over block ice
