Cooper & Co in Salisbury will open on Monday 5 October following the conversion of the former Pizza Hut building on Blue Boar Row, as the operator continues its expansion across the south of England.

The building has been taken back to brick, with work including the relocation of staircases and creation of a new bar, cellar, trading areas, manager’s accommodation and beer garden.
Its offer will centre on drinks, sport and competitive socialising, with Sky Sports, TNT Sports and pay-per-view boxing alongside a private karaoke room, interactive darts and photobooth.
Expansion plans
The drinks range will include draught beers, cask, wines, cocktails, shooters and spirits, including beer from Salisbury-based Hopback Brewery.
Cooper & Co marks Amber Taverns’ first opening in Wiltshire and forms part of its wider southern expansion programme.
Amber Taverns regional director south Salle Wroblewski said the “significant investment” represented the pubco’s “commitment” to expansion in the south.
“This has been a substantial conversion,” she added.
“Salisbury is an important opening for us, both in its own right and as part of our wider growth ambitions.
Considerable opportunity
“We see considerable opportunity to take Amber’s successful operator-managed model into new areas of the country, while ensuring every pub is developed around its location and customer base.
“We’re actively growing our presence in the south and Cooper & Co is a great example of the quality of site and level of investment we are prepared to make where we see the right opportunity.”
Earlier this week, Amber reported record revenue of £131.5m for FY26, up 9.6%, while EBITDA rose 11.5% to £28.1m.
The group opened 16 sites during the year, investing £15.3m in new pubs, and has continued to grow its southern pipeline, with sites in Cosham, Hastings, Eastleigh and Bromley.
The Bromley venue is set to become Amber’s first pub inside the M25.
