In the latest episode of publican podcast, Three Landlords Walk into a Bar Powered by Heineken SmartDispense®, the licensee of The White Lion, Stockport, introduces us to the pub’s resident ghost and lifts the lid on what makes his pub so successful
This isn’t just any pub story. It’s a tale of revival, community, and the benefits of embracing innovation in a centuries-old venue – and it’s the latest episode of “Three Landlords Walk into a Bar,” brought to you by Heineken SmartDispense®.
In this, the fourth episode of the podcast, co-hosts Jodie Kidd, model, motorsport enthusiast and publican, and landlord Merlin Griffiths of First Dates fame, sit down with Mark Chalmers, General Manager of The White Lion in Stockport.
Dating back to the 1400s, the pub has a rich history, serving as a hotel, guesthouse, and coaching inn over the years. This deep history, however, comes with more than just charming anecdotes – it brings with it a reputation for being a bit spooky too…
Chalmers, initially sceptical of any haunting stories, recounts his own chilling experiences, from feeling a presence and hearing noises to glasses moving on their own. Despite these eerie encounters, Mark has successfully revitalised the pub, making it a beloved local for the Stockport community once again.
The Secret to a Perfect Pint
As an operator that had previously used traditional cellar systems throughout his career, Mark initially viewed Heineken SmartDispense® cellar tech with the same scepticism he felt towards the White Lions’ haunted reputation. However, just as with the ghosts, his quickly became a believer.
He now praises the efficiency and consistency of SmartDispense® for delivering a “good pint, all the time, on all different draught products”.
Mark highlights how SmartDispense® tackles common pub challenges, particularly maintaining consistent beer temperatures. He notes that older systems and busy periods often lead to fluctuating temperatures, affecting the quality of the pint. With SmartDispense®, he no longer faces complaints about pints being " too warm". He also emphasises the transparency and efficiency of the system in helping the business maintain high standards of product and service.
Perhaps a more unique benefit for Chalmers and his team, is the White Lion ghost seems to spend much of its time in the cellar, but SmartDispense® means less time down there, line cleaning and changing barrels, and more time where it matters – with customers.
Running a Profitable Pub
Beyond the perfect pint, Chalmers shares insights on running a profitable pub in today’s climate.
He emphasises the importance of community connection, noting how The White Lion’s reopening has brought people back who frequented the pub decades ago. The pub also draws crowds by showing live sports, including local team Stockport County, and hosting functions like birthdays and weddings.
Mark’s advice to aspiring publicans? Do your homework, be financially prepared, don’t be afraid to work long hours, train your staff to maintain high standards and install great tech like Heineken SmartDispense® to help them do it.
The White Lion proves that with the right approach and innovative technology, historic pubs can thrive in the modern hospitality landscape.
