Business strategy: carvery is one of RedCat's key focuses (RedCat)

The Coaching Inn Group remains “very much the jewel in our crown”, said RedCat Hospitality boss Richard Lewis.

This comes as the operator, founded and chaired by Rooney Anand, described the 12 months to March 2025 a ‘transformational year’ for the business.

The period saw a number of milestones for the group including a restructuring, refinancing, a return to estate investment, a rise in underlying profits and winning awards.

Earlier this month (September), RedCat Hospitality reported a positive start to the first quarter of its financial year, seeing sales up 6.7%.

During the summer, The Morning Advertiser revealed the firm was trialling a new carvery experience with kiosk ordering at its Castle Carvery site, the Clocktower in Bowthorpe, Norfolk.

At the time, RedCat Independent Pubs chief operating officer Miles Slade told The Morning Advertiser this marked a significant milestone in the division’s journey, with the investment aiming to enhance the guest experience and support its operational goals.

He added: “It’s a forward-thinking step that positions us for long-term growth. The tea at the Clocktower are looking forward to having everyone back to the new and improved Castle Carvery.”

Carvery focus

More recently, the company reported a sales increase of more than 30% year on year since the site reopened, ahead of its expectations with further similar sites in the pipeline and carvery pubs being a focus.

Moreover, pubs with rooms was identified as a key growth area for the group with additional investment planned for 2025/26 as it continues to invest in its existing estate.

The purchase of the Warwick Arms Hotel in Warwick in July this year marked a return to the acquisition trail and the venue will be brought under The Coaching Inn Group umbrella.

RedCat is looking to further scale and develop the arm as a nationally-recognised brand.

Chief executive Lewis said: “This was a transformative year for RedCat. The team have worked through a huge amount of change. What has emerged is a stronger leaner and more coherent business, which is performing well, is in good growth and has lots of exciting opportunities ahead.

“We have delivered a significant rise in site EBITDA, which in part reflects the very strong performance of The Coaching Inn Group, demonstrating the continued demand for good quality rooms coupled with excellent customer service.

“This part of the business remains very much the jewel in our crown with plenty of potential for the future as a proven format for growth.”

Targeted investment

The pub group boss outlined how the company has invested into its estate over the recent period and the results it has had.

Lewis added: “During this period, RedCat Independent Pubs executed a strategic disposal of several non-core sites, reinvesting proceeds into a targeted investment programme that is already driving material growth.

“A flagship example is the £3m refurbishment of the iconic Castle of Brecon Hotel in south Wales, which has delivered a 94% sales uplift in the first quarter since reopening.

“Further investments across Leicestershire, Nottinghamshire and Staffordshire are also performing strongly, with these pubs collectively delivering 20.3% like-for-like sales growth in Q1 of the current financial year, supporting RedCat Independent Pubs’ overall 6.2% like-for-like uplift.

“It was an award-winning year for us. I cannot thank the entire RedCat Hospitality team enough for their efforts and talent, which saw The Coaching Inn Group awarded Best Accommodation Operator at the Publican Awards 2025.

“We were further accredited as a Which? Recommended Provider for Small Hotel Chains for the second year running.

“Such recognition is always welcome - it validates our strategy and vision for the business and above all, highlights the amazing contribution of the people across our business.”
