Inspired by the classic Mexican cocktail, Franklin & Sons Paloma is described as a refreshing and vibrant serve.
The flavours pair well with spicy fish tacos and salty snacks, best served with a pink grapefruit wedge and a sea salt rim to make the citrus flavours pop.
Unique twist
While the recipe calls for Tequila, operators could also put a unique twist on the serve and make the cocktail with Mezcal instead for a smokier flavour profile.

Meanwhile, taking inspiration from the British countryside, Franklin & Sons Summer Garden serve uses Japanese Yuzu to bring a modern, global edge to the traditional elderflower profile.
The Summer Garden should be served with a sprig of fresh mint or a thin slice of cucumber and pairs well with light summer salads or goat’s cheese dishes.
For a unique twist on the drink, adding a dash of peach bitters enhances the floral notes of the Yuzu.

Elevating drinks
A spokesperson for Franklin & Sons, which also sponsors the Top 50 Cocktail Bars, told The MA both cocktails offer high margin opportunities for operators.
“By using premium mixers to elevate simple builds, both serves cater to the sessionable, longer-drink trend, encouraging guests to stay for a second round of cocktails”, the spokesperson continued.
“Using Pink Grapefruit and Yuzu sodas provides a sophisticated, multi-layered profile that feels like a complex craft cocktail, but can be executed quickly during a busy shift.”
