Max and Noel Venning will launch a martini, wine and oyster bar close to their original Three Sheets location in London’s Dalston next month.

Berryman’s will be more traditional in style than the pair’s existing Three Sheets cocktail bars, offering “simple drinks and snackable foods”. It takes inspiration from coastal bars across Europe, including those in Emilia-Romagna, Barcelona and along the English Channel.

The opening drinks menu will feature a rotating selection of martinis alongside a Vesper, a white Cosmopolitan with gooseberry and other seasonal cocktails.

The food menu has been developed by the currently three strong group’s head chef Ethan Pack and is inspired by Spanish and Italian bar snacks.

Smaller options will include olives, salted almonds and Jumi baguette with salted butter, alongside a selection of oysters.

Oyster accompaniments will include strawberry mignonette; gherkin granita; Kashmiri and clementine ponzu; and a house hot sauce made with El Yucateco green habanero sauce, moscatel vinegar and lime.

The brothers will also introduce dirty martini crisps: olive oil Sarriegui crisps seasoned with a house mix of juniper berries, kosseret tea, coriander seeds and olive powder.

Other options will include 18-month-aged Comté with quince; coppa di Parma; giardiniera pickles; and a take on the famed bikini sandwich, pressed thin and filled with jamón, ’nduja, Manchego and Gouda.

Desserts will include fior di latte ice cream with olive oil and balsamic vinegar, as well as Spanish biscuits.

All the food is designed to be eaten without cutlery at the standing-only bar.

The 20-capacity bar will operate on a walk-in-only basis, with a waiting list at the door and no reservations.

The brothers plan to maintain a limited online presence, relying on word of mouth and passing trade to bring people into the Kingsland Road venue.

Designed by Nothing & Nothing studio, the space is set across one floor and will feature a dark oak-panelled entrance, low lighting and a curved marble bar counter.

Oak ledges will provide additional space for drinks, while wine and spirits will be displayed on two-tier shelving with bronze supports.

The Vennings opened Three Sheets Dalston in 2016. They subsequently launched neighbourhood cocktail bar and restaurant Little Mercies in Crouch End in 2018, followed by a second Three Sheets site in Soho in 2024.
